Cornmeal Buttermilk Biscuits and Honey Butter

I’ve been busy getting ready to bring my bunnies to Tewksbury tomorrow morning. Lots of things to prepare. I’ve been listening to podcasts like crazy, so I have a surprisingly amount of information stuck in my brain right now. Haha!

Before I share with you two recipes, I just want to mention that I updated yesterday’s post, ‘Kisses from Katie’- Book Review. I added some pictures of Katie and her children and Katie’s kindergarten class. Go check it out, and enjoy the pictures!

Cornmeal Buttermilk Biscuits

  • 1 1/2 cups all-purpose unbleached flour
  • 1/2 cup cornmeal
  • 2 Tbs.raw sugar
  • 1/2 Tsp. baking powder
  • 1/2 Tsp. baking soda
  • 1/2 Tsp. salt
  • 4-6 Tbsp. chilled butter, cut into small pieces
  • 3/4 cup buttermilk

Combine flour, cornmeal, sugar, baking powder, soda, and salt in a mixing bowl. Cut in butter and stir until mixture resembles coarse meal. Add buttermilk; stir just until moist. Turn dough out onto a lightly floured surface and roll out to 1/2″ thick. Cut biscuits and placed on greased tray. Bake at 400° F. for twelve minutes or until golden brown.

 

Honey Butter

  • 1/4 lb. butter
  • Honey
  • 1/8 Tsp. cinnamon

Allow 1/4 lb. of butter to soften at room temperature. Place in a mixing bowl and add a little honey.Blend together with mixer or blender. Add more honey until you have desired thickness. 1/8 Tsp of cinnamon can be added as a variation. Pour the mixture into glass jars, plastic containers, etc.. Refrigerate until needed.

The Honey Butter is great on rolls, breads, etc., but it is also great as little gifts!
